This dish is incredibly simple and versatile—essentially whatever starchy veggies you can find simmered in coconut milk. Imagine for a second: You’re low on cash, but you do small-scale mixed farming. You have a variety of ground provisions and a few coconut trees on the edge of your farm. A few banana plants, a breadfruit tree, and some dasheen down by the stream. That right there is the recipe for Pakasa—a dish born out of necessity.
