One Pot Seafood Soup by the Sea | A Day at Amber Rock Park
A peaceful spot, a bubbling pot, and the sound of waves crashing in the background…that’s how I like to cook. On this trip, I brought my wok burner down to Amber Rock Park, one of Jamaica’s lesser-known gems, to make a hearty pot of seafood soup.
If you’ve never heard of Amber Rock Park, you’re not alone and that’s part of what makes it so special.
Amber Rock Park: A Hidden Beauty
Amber Rock Park and the surrounding Little Bay area are quiet, scenic, and off the beaten path. Unlike some of Jamaica’s more tourist-heavy coastal spots, this area still feels untouched.
I especially love visiting when the tide is high and the sea is a bit rough. The white water and wave sprays are absolutely mesmerizing—especially if you love the ocean like I do.
About the Soup: Simplicity, Freshness, and Big Flavor
This isn’t a fancy dish. It’s one pot, one burner, and ingredients that are easy to find especially if you live by the coast.
The seafood cooks quickly in a seasoned broth, but timing is key. Conch, in particular, can go from tender to tough real quick. But if you simmer it long enough, it softens back up and soaks up all that flavor.
Fresh seasoning is a must, and for this pot, I finish things off with:
A bit of scotch bonnet
A Trinidad pimento pepper for its incredible aroma
And of course, fresh thyme…because dry thyme is a scam
Almost forgot the okra—Jamaicans love pairing seafood with okra for a reason. It’s delicious and it ties the dish together beautifully.
